Ingredients:

5 Sweet Potatoes 5 Sweet Potato abt. 4 1/4 lbs.
1/4 Cup Sugar 1/4 Cup Sugar (up to 6)
1/4 Cup Brandy 1/4 Cup Brandy or more to taste
3 Tablespoons Butter 3 Tablespoons Butter or Margarine; melted or
1 Teaspoon Salt 1 Teaspoon Salt (to taste)
1/2 Teaspoon Nutmeg 1/2 Teaspoon Nutmeg ground
1/2 Teaspoon Ginger 1/2 Teaspoon Ginger minced
1/8 Teaspoon Pepper 1/8 Teaspoon Pepper sweet red
1 Tablespoon Butter 1 Tablespoon Butter or Margarine; melted or
1 Tablespoon Orange 1 Tablespoon Orange Rind grated
1 Unit Orange 1 Unit Orange Slices

Directions:

1. Oven 350 F.

2. Cook sweet potatoes in boiling water to cover 45 minutes or until tender; cool to touch.

3. Peel and mash. Stir in sugar and next 6 ingredients; spoon mixture into a lightly greased 11 x 7 x 1 1/2-inch baking dish.

4. Brush top with 1 tablespoons melted butter; sprinkle with orange rind.

5. Bake at 350 F for 25 to 30 minutes. Garnish if desired.
