Ingredients:

2 Teaspoons Margarine or butter * melted
1 Cup Skim Evaporated Milk
1/8 Teaspoon Pepper black, cracked
2 Tablespoons Flour unbleached white
4 Eggs slightly beaten
3/4 Teaspoon Salt divided
1/4 Cup Scallion finely chopped
1 Cup Broccoli chopped
1/2 Cup Flour plus
2 Tablespoons Margarine plus
1/4 Cup Yogurt plain
1 Tablespoon Bacon Bits imitation
8 Ounces Swiss Cheese shredded, divided

Directions:

1. Combine flour and 1/4 teaspoon salt in mixing bowl.

2. Cut in margarine until mixture resembles a coarse meal.

3. Add yogurt and mix thoroughly; form into a ball.

4. Roll dough out to approximately 1/8" thickness.

5. Fit into a 9" pie pan or quiche dish; flute or crimp edges and set aside.

6. Combine vegetables and bacon bits. Cover bottom of pastry shell with 4 ounces cheese; add entire vegetable mixture.

7. Combine eggs, milk, 1/2 teaspoon salt, and pepper.

8. Pour egg mixture over vegetables; top evenly with remaining cheese.

9. Bake at 325 F for 50-60 minutes or till knife, when inserted in center, comes out clean.

10. Remove from oven and let stand 10 minutes before serving.
