Broccoli Spoon Bread with Parmesan Sauce

This is a tough preparation with broccoli as the key ingredient. Basically broccoli is highly nutritious food so everybody should know how to prepare the dish.

Ingredients:

1/2 Cup Yellow Cornmeal
1 Tablespoon Sugar depending on taste
1 Bunch Broccoli fresh
2 Teaspoons Baking Powder soda
1 1/2 Cups Milk (up to 2)
1 Teaspoon Salt (if using water)
2 Eggs separated

Directions:

1. Trim broccoli into 2 inch long pieces.

2. Cook until tender crisp. Reserve 1/2 cup liquid.

3. Gradually stir milk into cornmeal and cook over medium heat for 5 minutes until thickened.

4. Cool slightly. Beat yolks and add cornmeal, baking powder, salt and sugar; mix well.

5. Beat whites stiff but not dry. Fold into cornmeal mixture.

6. Arrange broccoli in a well greased deep 2 quart souffle dish.

7. Spoon batter over smoothing to edges. Bake at 375 degrees for 45-50 minutes (until brown).

8. Serve with sauce. PARMESAN SAUCE: 2 tbsp. margarine 1 tbsp.

9. cornstarch 1 c. milk 1 c. grated Parmesan cheese 1/2 c.

10. reserved broccoli liquid 1/2 tsp. salt 1/8 tsp.

11. white pepper 1/4 tsp. nutmeg Melt margarine.

12. Stir in cornstarch to form smooth paste. Gradually stir in milk and cook over low heat until thickened and comes to boil.

13. Cook and stir for 3 minutes. Add cheese a little at a time stirring until melted.

14. Stir in broccoli liquid and rest of ingredients.
