Broiled Chicken Indienne

Ingredients:

1 1/4 Cups Stewed Tomatoes (14.5 oz ea)
1/4 Teaspoon Cinnamon on apples
1 Teaspoon Cumin Seed (fluid measure)
2 Tablespoons Vegetable Oil vegetable for frying
1 Tablespoon Cilantro
2 Tablespoons Tomato Paste (6 ounce)
1/2 Teaspoon Pepper preferably cracked
1 Teaspoon Ginger (up to)
4 Tablespoons Sour Cream warmed
1/2 Teaspoon Salt (if using water)
2 Cloves Of Garlic minced
4 Chicken Breasts halved

Directions:

1. Trim any excess fat and skin from the chicken breasts.

2. Place in a glass dish. Using a blender or food processor, combine the tomatoes, garlic, ginger, tomato paste, oil, coriander, cumin, cinnamon, pepper and salt until almost smooth.

3. Reserve 1/4 cup marinade to use as a sauce.

4. Cover chicken with the rest of marinade. Allow to sit at room temperature 30 minutes.

5. Place chicken on a broiler pan, skin side down.

6. Broil 7 to 10 minutes on each side, 5 to 6 inches from heat.

7. Baste before turning. Spoon with marinade. Bake at 350 F for 10 minutes.

8. Remove chicken to platter. Bring reserved marinade to a boil.

9. Spoon over chicken. Serve with a dollop of sour cream on each chicken breast.
