Ingredients:

2 Pounds Olive Oil 2 Pounds Flounder fillets olive oil
3 Cups Bread Crumbs 3 Cups Grated bread crumbs
2 Cups American Cheese 2 Cups Diced American cheese
2 Teaspoons Paprika 2 Teaspoons Paprika Sweet -- optional
2 Teaspoons Dry Mustard 2 Teaspoons Dry mustard optional
4 Teaspoons Worcestershire Sauce 4 Teaspoons Worcestershire sauce to taste
1 Cup Beer 1 Cup Beer Any Brand, To Cover

Directions:

1. Cut fish in serving pieces.

2. Brush on both sides with olive oil. Roll in bread crumbs.

3. Broil about 4 minutes on each side or until fish flakes.

4. In meantime, combine cheese, paprika, mustard, Worcestershire sauce and beer.

5. Cook over low heat, stirring occasionally until cheese melts.

6. Whip smooth. Arrange fillets on platter, garnish with lemon wedges, then pour sauce into serving dish.
