Broiled Swordfish Mirabeau

Ingredients:

4 Unit Swordfish 1-1/4"
2 Tablespoons Butter softned
1 Tablespoon Anchovy or anchovy
1/2 Cup Olive Oil use a good one
1 Unit Lemon juice of
4 Unit Anchovy chopped

Directions:

1. Roll the steaks in olive oil and broil seven minutes on each side.

2. Season with salt and freshly-ground pepper while the fish is cooking.

3. Mix butter and anchovy paste and spread on the hot steaks as they come from the broiler.

4. Serve with a slice of lemon which has an anchovy fillet and an olive tooth picked into.

5. Also for: Any thick, firm-fleshed fish such as King, cobia, grouper.

6. Suggestions: SUBST paste made from smoked mullet or smoked mackerel.
