Ingredients:

1/2 Pound Shrimp 1/2 Pound Shrimp cooked
1/2 Pound Bay Scallop 1/2 Pound Bay scallops cooked
2 Cups Brown Rice 2 Cups Cooked brown rice
1/2 Cup Red Pepper 1/2 Cup Red pepper cut in julienne strips
1/2 Cup Peas 1/2 Cup Peas cooked
1/4 Cup Sunflower Seed 1/4 Cup Sunflower seeds ;
1/4 Cup Raisin 1/4 Cup Raisins soaked for an hour in:
1 Cup Salad Greens 1 Cup Jarlsberg cheese cut in julienne strips Dressing (Recipe below) Crisp salad greens

Directions:

1. In bowl, combine all ingredients except dressing and greens.

2. Pour dressing over all and toss to blend. Cover and refrigerate at least 1 hour, to blend flavors.

3. To serve, spoon onto crisp greens. Makes 4-6 servings.

4. Dressing In medium bowl, combine 1 cup plain yogurt, 1/2 Cup chopped seeded cucumber, 1/4 cup chopped green onion, 3 tablespoons lemon juice, 2 tablespoons light soy sauce and a generous dash of lemon pepper.
