1. Cream sugar, shortening and vanilla; add egg yolks and beat until smooth.
2. Sift all dry ingredients together 3 times. Add dry ingredients alternately with buttermilk to the creamed mixture.
3. Fold in stiffly beaten egg whites. Bake in greased and floured layer pans (3) for 20 to 25 minutes in a 325 degree oven.
4. Frost with Seven Minute or Cream Cheese Frosting (see recipes).
