1 Pound Fresh Shrimp 1 Pound Unpeeled large fresh shrimp
1/4 Cup All-Purpose Flour 1/4 Cup All-purpose flour sifted
1/4 Cup Cornstarch 1/4 Cup Cornstarch divided
1/8 Teaspoon Salt 1/8 Teaspoon Salt (I used reduced sodium)
1/4 Cup Beer 1/4 Cup Beer Any Brand, To Cover
2 Tablespoons Butter 2 Tablespoons Butter or margarine, melted (1 stick)
1 Unit Egg 1 Unit Egg yolk (optional)
1 Unit Vegetable Oil 1 Unit Vegetable oil *

1. Peel shrimp, leaving tails intact, devein, if desired.

2. Combine flour, cornstarch, and salt. Add beer, butter, ad egg yolk; stir until smooth.

3. Pour oil to depth of 2 inches into a Dutch oven; heat to 375.

4. Dip shrimp into batther; fry, a few at a time, until golden.
