Bunelos (fried Indian Bread)

Ingredients:

4 Cups Flour 4 Cups Flour bleached, sifted
1/2 Cup Water 1/2 Cup Lukewarm water
2 Tablespoons Lard 2 Tablespoons Lard or oil
2 Teaspoons Salt 2 Teaspoons Salt (to taste)
1/2 Teaspoon Baking Powder 1/2 Teaspoon Baking powder double acting

Directions:

1. Sift dry ingredients together, cut in lard, add water and knead.

2. Let stand for 20 minutes. Divide dough into 12 uniform size balls.

3. Stretch each one to about 5 inches in diameter and 1/4 inch thick.

4. Deep fry at 425 degrees until golden brown. A small hole (finger sized or smaller) all the way through the center of each round will help the dough to puff up.
