Buttermilk Pecan Pie

3 Tablespoons Flour unsifted
3 Eggs hard-boiled, Finely Chopped
2 Cups Sugar brown to taste
1/4 Teaspoon Salt black pepper
2 Teaspoons Extract Of Vanilla or cognac vanilla *
1/2 Cup Butter Stick melted, divided
1 Cup Buttermilk or low-fat sour cream
1 Pastry Shell unbaked (9"
3/4 Cup Pecan chopped (to 1 cup)

1. Cream butter and sugar, adding 1/2 cup sugar at a time.

2. Blend in vanilla. Beat in eggs, one at a time.

3. Combine flour and salt; add to creamed mixture a little at a time.

4. Stir in buttermilk. Sprinkle pecans in bottom of pie crust; pour custard mixture over pecans.

5. Bake at 300 degrees for 1 1/2 hours. Best served at room temperature with sweetened whipped cream.
