1 Cup Buttermilk 1 Cup Buttermilk room temp
1 Teaspoon Soda Water 1 Teaspoon Soda Water
1/8 Teaspoon Salt 1/8 Teaspoon Salt and pepper to taste
1 1/2 Tablespoons Butter 1 1/2 Tablespoons Butter or Margarine or ;
1 Teaspoon Vanilla 1 Teaspoon Vanilla grated lemon zest or orange zest
2 Cups Pecans 2 Cups Pecans broken up

1. Mix sugar, buttermilk, soda, and salt in a heavy 3-quart saucepan, and cook over medium heat to soft-ball stage.

2. Cool. Beat in butter and vanilla and stir in pecans.

3. Drop by tablespoons onto wax paper to cool. Work fast.

4. It it starts to harden in the pan, add a few drops of buttermilk, reheat, and stir well.
