Make these the night before for a quick breakfast meal.

Ingredients:

8 oz Self-Raising Soda Bread Flour
1 pinch Salt
1 oz Margarine or butter hard
1 Egg , beaten
5 oz Buttermilk

Directions:

1. Preheat oven to 450 F.

2. Sift flour with salt and rub in butter or margarine.

3. Make a well in the center and pour in the egg and most of the buttermilk.

4. Mix quickly to form a soft dough, adding a little extra buttermilk if necessary.

5. Turn out onto a floured surface and roll out lightly until 1 inch in thickness. Working quickly, cut into 2 inch rounds.

6. Glaze with an additional egg or the remaining buttermilk and set on a floured baking sheet.

7. Bake for 15-20 minutes until light brown.
