This is quick to prepare and cook, and has a melt-in-your-mouth flavor. It is also very rich, so start with a small piece. It goes very well with coffee.

Ingredients:

3 Butter
3 cups Flour Sifted
1 teaspoon Baking Soda
3 Eggs
2 cups Sugar
1 cup Buttermilk
5 teaspoons Butternut Spice
1/4 teaspoon Salt
8 oz Cream Cheese
16 oz Confectionery Sugar

Directions:

1. Preheat oven to 350 degrees Grease and flour three 9-inch cake pans of butter.

2. Add eggs one at a time, beating well after each addition.

3. Mix soda and salt into buttermilk until foamy.

4. Add alternately with flour. Add 3 teaspoons flavoring.

5. Pour into prepared pans and bake until done, 20 to 25 minutes.
