Butterscotch Ice Cream

This is a fairly simple recipe and is great if you could add some nuts, fruits and some custard paste for more extra fat and taste.


1 cup Brown Sugar lightly packed
1 tablespoon Cornstarch
1/4 cup Dark Corn Syrup
1/4 teaspoon Salt
3 cups Milk
2 Eggs
5 1/3 oz Evaporated Milk
1 cup Heavy Whipping Cream
1 teaspoon Extract Of Vanilla

1. In a medium saucepan, combine brown sugar and cornstarch. Stir in corn syrup, salt and milk.

2. Stir over medium heat until brown sugar melts and mixture begins to simmer; set aside.

3. In a small bowl, beat eggs until blended.

4. Stir about 1 cup hot milk mixture into eggs. Stir egg mixture into remaining milk mixture.

5. Cook and stir over low heat until slightly thickened, about 2 minutes. Stir in evaporated milk, whipping cream and vanilla.

6. Cool to room temperature. Pour into ice cream canister.

7. Freeze in ice cream maker according to manufacturer's directions.
