Butterscotch Oatmeal Cookies

This is a great way to use a pudding mix. The cookies taste just like butterscotch.
I have also made this trading the butterscotch for other flavors like pistachio. That one turns a pale green. Kids love it!

Directions:
1. Preheat oven to 350 degrees F Grease cookie sheets.2. Cream shortening, sugar, egg and vanilla. Mix together the dry pudding mix, oats, flour, salt, baking soda and cream of tartar.3. Stir dry ingredients into creamed mixture. Roll the mixture into balls about 1 1/2 in diameter.4. Place on cookie sheet and flatten slightly. Bake about 10 minutes.
