3/4 Cup Yellow Cornmeal 3/4 Cup Yellow cornmeal
1/4 Cup Flour 1/4 Cup Flour more as needed to 7 c
2 Teaspoons Salt 2 Teaspoons Salt (to taste)
1 Teaspoon Cayenne Pepper 1 Teaspoon Cayenne pepper ground
1/4 Teaspoon Garlic Powder 1/4 Teaspoon Garlic powder up to 3
2 Unit Catfish 2 Unit Catfish fillets (up to 10)
1 Unit Vegetable Oil 1 Unit Vegetable oil as needed

1. In a bowl combine the cornmeal, flour, salt, cayenne pepper, and garlic powder.

2. Pour mixture onto a pie plate. Coat the catfish fillets with mixture, shaking off excess.

3. Fill a 12 inch skillet half full with vegetable oil and heat it to 350 degrees.

4. Add fillets to oil and fry until golden brown, about 56 minutes.

5. Put the fillets on serving plates, add a spoonful of tartar sauce, and serve.
