Cajun Corn Soup

This hearty corn soup includes ham to make it suffice as a supper soup if paired with good bread. The addition of tomatoes makes it unique to many corn soups.

Ingredients:

1 cup Onion Chopped
1 cup Green Bell Pepper Chopped
6 Green Onions sliced
1/2 cup Vegetable Oil
1/2 cup All-Purpose Flour
3 cups Water
1 can Stewed Tomato Cajun-style 14 1/2 ounces
2 cups Tomatoes Chopped peeled
1 can Tomato Paste (6-oz.)
2 Frozen Corn whole kernal (16 oz. each)
3 cups Ham Cubed
1 1/2 lb Sausage Fully smoked sliced
1/8 teaspoon Cayenne Pepper or to taste
Salt to taste
Hot Sauce to taste

Directions:

1. In a large kettle or Dutch oven, saute onion, green pepper and green onions in oil until tender, about 5 minutes.

2. Add flour and cook until bubbly. Add water, stewed tomatoes and chopped tomatoes and tomato paste; mix well.

3. Stir in the corn, ham, sausage, cayenne pepper, salt and hot pepper sauce.

4. Bring to a boil, stirring frequently. Reduce heat; simmer, uncovered for 1 hour, stirring occasionally.
