Cajun Country Supper

A one-dish meal that would be a wonderful addition to any pot luck dinner. With a little alteration, this could also be a fantastic crock pot dish to be put on in the morning, and be cooked to perfection when one gets home from work.


1 tablespoon Vegetable Oil
1 Onion chopped
1 Green Bell Pepper chopped
1 Celery Stalk thinly sliced
1 Garlic Clove minced
1/2 teaspoon Hot Sauce
1/4 teaspoon Dried Oregano
1/4 teaspoon Dried Thyme Leaves
3 cups Frozen Potatoes Idaho
1/2 lb Smoked Kielbasa sausage ( Polish sausage) cut into chunks
1/2 lb Frozen Shrimp peeled (rinse off any frost)
16 oz Whole Tomatoes in juice chopped well drained
8 oz Tomato Sauce
Parsley Chopped

1. In 3-quart microwave-safe casserole combine oil, onion, green pepper, celery, garlic, hot sauce, oregano and thyme Cover loosely with plastic wrap; cook on High 6 to 8 minutes or until just tender, stirring once.

2. Stir in potatoes, kielbasa, shrimp, chopped tomatoes and tomato sauce.

3. Re-cover; cook on High 10 to 12 minutes or until shrimp is cooked, stirring once.

4. Garnish with parsley.
