A one-dish meal that would be a wonderful addition to any pot luck dinner. With a little alteration, this could also be a fantastic crock pot dish to be put on in the morning, and be cooked to perfection when one gets home from work.
1. In 3-quart microwave-safe casserole combine oil, onion, green pepper, celery, garlic, hot sauce, oregano and thyme Cover loosely with plastic wrap; cook on High 6 to 8 minutes or until just tender, stirring once.
2. Stir in potatoes, kielbasa, shrimp, chopped tomatoes and tomato sauce.
3. Re-cover; cook on High 10 to 12 minutes or until shrimp is cooked, stirring once.
4. Garnish with parsley.
