The mildness of the white fish combined with the spiciness of the cajun seasoning makes for a good combination to serve to those that don't like their food too spicy. Add more cajun seasoning to taste if more spiciness is desired.


1 lb White Fish Fillets
3 tablespoons Butter
1 tablespoon Cajun Seasoning
1 tablespoon Garlic Minced
1/4 cup White Wine Vermouth of
4 Lemons wedges

1. Melt butter over med-hi heat in skillet.

2. Stir in 1 Tbsp Cajun's Choice and garlic and stir constantly for 2 minutes to cook garlic.

3. Stop the cooking of the butter and garlic by adding Vermouth or white wine.

4. Stir constantly and cook for 1 minute. Add fish fillets and cook until fish flakes apart.

5. Squeeze lemon over fish. (This recipe works well with snapper, sole, cod perch or salmon).
