A traditional dish of New Orleans comprised of a stew made from seafood, sausage and chicken. The "file" (powdered leaves of the sassafras tree) makes the unique flavor of gumbo.
1. No cooking oil is needed; chicken fat will melt.
2. Preheat large pot over medium heat for 5 minutes.
3. Add cut up chicken and fry about 10 min.
4. Add onion and let chicken and onion brown together.
5. When browned, add green onions and parsley. Let cook about 15 min.
6. Don't stir chicken too much. Add sausage, shrimp and oysters.
7. Let cook 10 min. and add water.
8. Let mixture come to a boil for 15 min.
9. Break raw eggs, 1 at a time, in boiling mixture in separate places in your pot.
10. Continue to cook for 10 minutes. Do not stir during this time.
11. Add file. Stir and turn heat off.
12. Add salt and pepper to taste. Serves 10 to 12.
