Cajun Jambalaya

This recipe makes the famous fried rice of New Orleans containing spicy sausage, shrimp and chicken .

Ingredients:

3 cups Raw Rice
1 lb Shrimp Peeled
6 oz Tomato Paste
3 Bay Leaves
1/2 teaspoon Cayenne Pepper
3 tablespoons Salt
5 cups Water
4 Cloves Of Garlic Cloves
1 Bell Pepper
1 1/2 Onions large
1 lb Boneless Chicken Breast
2 lb Sausage cut 1/4 in. thick

Directions:

1. Saute sausage, chicken, onions, bell pepper and garlic until sausage and chicken are browned. Add the water, salt, cayenne, bay leaf and tomato paste.

2. Bring to a boil with the lid on. When water boils add the shrimp and the raw rice. Stir and lower fire.

3. Let rice simmer, stirring every five minutes until rice is cooked.
