Sometimes i get tired of regular potato salads when we have a picnic and this Cajun potato salad is a nice change. I love the look on peoples faces when they get something a little extra when they taste it.Cajun seasonings are delicious is so many ways.
2. Let cool, then peel and chop into large chunks.
3. Mix mayonnaise, yellow mustard, Louisiana hot sauce, and salt together.
4. Add potatoes, along with the rest of the ingredients, and mix well.
5. You can make this the day before and refrigerate it overnight.
6. You may need to put a little more dressing on it if it is a little dry.
