Cajun Stuffed Potatoes

This spicy side dish features a rich and tasty stuffing for the humble potato. Sausage, shrimp and crab meat mingle with cheese and butter for a fancy, flavorful take on twice-stuffed potatoes.

Ingredients:

10 Potatoes Baked
1/2 cup Butter
1 Onion chopped
1 Green Bell Pepper Chopped
1 Red Bell Pepper chopped
3 oz Tasso Ham Diced
1/2 lb Smoked Andouille or sausage Diced
1 lb Shrimp Small Chopped
1/2 cup Butter melted
12 oz Cream Cheese cubed
1 lb Crab
Salt to taste
Pepper to taste
2 cups Green Onions chopped
1/2 lb Cheddar Cheese grated

Directions:

1. Bake potatoes, and scoop out insides, reserving skins.

2. Mash potatoes, and set aside. Melt 1/2 cup butter, and saute onion and bell peppers until limp.

3. Add tasso and andouille; cook 4 minutes, Add shrimp: cook lightly.

4. Add 1/2 cup butter and cream cheese: cook until cream cheese melts.

5. Remove from heat. Stir in crab meat and mashed potatoes.

6. Mix well, and add salt and pepper, if needed.

7. If consistency is too heavy, add more melted butter.

8. Stuff mixture back into potato skins, and top with green onions and Cheddar cheese.
