This is a versatile recipe for stuffed sole. This recipe has a cajun feel, but once you know the method you can adjust spices and stuffing ingredients to your taste. An easy and quick week night dinner!
1. Fillets should be about 1/4 inch thick x 10 inches long.
2. In 1 quart casserole combine chopped pepper, onions, butter, parsley, cayenne, salt and pepper.
3. Microwave at High 2 to 3 min. Add remaining ingredients except sole.
4. Mix well. Spread 1/4 of this stuffing down center of each fillet.
5. Roll up enclosing stuffing. Secure with wooden picks.
6. Stand on end in 9 inch pie plate. Cover with plastic wrap.
7. Microwave at Medium-high for 8-10 min. Let stand, covered, for 3 minutes.
