This meal is a variation on the simple and tasty chicken and rice dish, kicked up a notch with the use of Cajun seasoning.

Directions:
1. Cook rice according to package directions.2. Rinse chicken; pat dry with paper towels. Stir together Cajun seasoning and thyme.3. Rub over chicken pieces. Heat oil in skillet over medium high heat.4. Cook chicken for 6 minutes or until no longer pink, turning once.5. Remove from skillet and keep warm. Add sweet pepper and okra to skillet; cook for 2 to 3 minutes.6. Remove vegetables and add wine to and broth to skillet.7. Scrape up any bits left in pan. Bring mixture to a boil.8. Boil for 3 minutes to reduce. Return vegetables to skillet and cook for 2 to 3 minutes to heat heat through.
