This meal is a variation on the simple and tasty chicken and rice dish, kicked up a notch with the use of Cajun seasoning.


1 1/2 cups Rice Quick cooking
4 Chicken Breasts skinned boned (1 lb total)
1 teaspoon Cajun Seasoning
1 teaspoon Dried Thyme Leaves
2 tablespoons Vegetable Oil Cooking oil
1 Green Bell Pepper or Red cut in thin strips
1 cup Frozen Okra cut
1/3 cup Dry White Wine
1/3 cup Chicken Broth

1. Cook rice according to package directions.

2. Rinse chicken; pat dry with paper towels. Stir together Cajun seasoning and thyme.

3. Rub over chicken pieces. Heat oil in skillet over medium high heat.

4. Cook chicken for 6 minutes or until no longer pink, turning once.

5. Remove from skillet and keep warm. Add sweet pepper and okra to skillet; cook for 2 to 3 minutes.

6. Remove vegetables and add wine to and broth to skillet.

7. Scrape up any bits left in pan. Bring mixture to a boil.

8. Boil for 3 minutes to reduce. Return vegetables to skillet and cook for 2 to 3 minutes to heat heat through.
