Cajun Yam-Pecan Bisque

To make cajun Yam-Pecan Bisque you need green onion, pecans oil, cajun seasoning, yam, chicken stock salt, and pecan toasted and ground. After sauting the green onion add the 2 tablespoons of cajun seasoning (saute for 30 seconds), stir in 1 lb of yams and 1 1/2 quart chicken stock salt (cook til yams soft) and then stir in the 1/2 cup of toasted pecans.

Ingredients:

1 Green Onion bunch finely chopped Reserve half of tops
2 tablespoons Pecans Oil
2 tablespoons Cajun Seasoning
1 lb Yam peeled and chopped
1 1/2 quart Chicken Stock
Salt
1/2 cup Pecan Toasted and Ground

Directions:

1. Saute green onions briefly in oil in a soup pot.

2. Add Cajun seasonings and saute 30 seconds longer to bring up flavors.

3. Stir in yams and stock. Add a little salt. Cook until yams are soft enough to puree.

4. Puree into a smooth soup. Stir in ground roasted pecans.

5. Season with salt to taste. Just before serving, stir in reserved green onion tops.
