Cajuned Salmon with Yellow Sauce

Great Salmon Dinner. Yummy!

Ingredients:

1 tablespoon Olive Oil
1 lb Salmon fillet (skinless)
1 tablespoon Salt seasoning
1 teaspoon Chili Powder
3 cups White Wine
1 tablespoon Mustard
1/4 teaspoon Pepper
3 tablespoons Heavy Whipping Cream

Directions:

1. Salmon:Wash and cut the salmon into halves.

2. Coat stove top skillet with olive oil and preheat to High.

3. Lightly dust salmon with salt seasoning and Chili powder.

4. Sear both sides. Pour in white wine and cover.

5. Bring wine to a boil and turn down heat to 50%.

6. Cover and cook for 20 minutes. Remove salmon.

7. Mustard Sauce: Use the leftover wine. Turn up heat on stove top skillet to high.

8. Add mustard and mix thoroughly. Pour in heavy whipping cream.

9. Reduce and add ground peppercorns. Whisk every once in awhile and remove when sauce is a little stiff and has an orange-ish appearance.
