Cake 'n Ale

Ingredients:

2 Cups Light Brown Sugar firmly packed
1 Cup Shortening melted
2 Unit Eggs separated, plus 2 egg yolks
3 Cups All-Purpose Flour
2 Teaspoons Soda (in 1 teaspoon water)
1/2 Teaspoon Salt (to taste)
1 Tablespoon Cinnamon (or more, to taste)
1/2 Teaspoon Allspice Whole
1/2 Teaspoon Cloves (up to 6)
2 Cups Beer or water
1 Cup Pecan chopped or walnuts
2 Cups Dates chopped chopped
1/2 Cup Butter melted
1 Cup Dark Brown Sugar firmly packed
1/4 Cup Milk (evaporated is best)
1/4 Teaspoon Salt (to taste)
1 Teaspoon Vanilla or Almond extract to
2 Cups Sugar (optional)

Directions:

1. Cake: Cream brown sugar and shortening until smooth.

2. Add eggs, blending well. Sift dry ingredients in a separate bowl.

3. Add dry ingredients to creamed mixture alternately with beer, beating well after each addition.

4. Stir in nuts and dates. Spoon batter into a well-greased and floured 10 inch tube pan.

5. Bake at 350 F for 1 hour and 15 minutes. Cool.

6. Frost with caramel frosting, if desired. Frosting: Combine butter and brown sugar.

7. Cook over low heat, stirring constantly, until sugar dissolves.

8. Add milk and bring to a boil. Remove from heat and cool slightly.

9. Add salt, vanilla and powdered sugar. Beat to spreading consistency.

10. Makes about 3 cups. Yield: 10 to 12 servings.
