This savory rice casserole features Cheddar cheese, sour cream and chiles to create a special flavor, and is easily put together earlier in the day, kept in the refrigerator, and popped into the oven just in time to welcome guests.
Ingredients:
1/4 cup Margarine Butter or
1 cup Onion chopped
4 cups White Rice freshly cooked
2 cups Sour Cream Dairy
1 cup Cottage Cheese Creamed
1 Bay Leaf crumbled
1/2 teaspoon Salt optional
1/8 teaspoon Pepper
12 oz Green Chili Peppers drained halved lengthwise leaving seeds
1. Preheat oven to 375 degrees F Lightly grease a 12 x 8 x 2-inch baking dish (2-quart).
2. In hot butter in large skillet, saute onion until golden about 5 minutes.
3. Remove from heat; stir in hot rice, sour cream, cottage cheese, bay leaf, salt (optional), and pepper; toss lightly to mix well.
4. Layer half the rice mixture in bottom of baking dish, then half of chilies; sprinkle with half of Cheddar cheese; repeat.
5. Bake, uncovered, 25 minutes, or until bubbly and hot.
