California Garlic Soup Fondue

Don't let the amount of garlic scare you--it sweetens as it sautees. This sophisticated soup is flavored with champagne. Very elegant!

Ingredients:

40 Cloves Of Garlic Cloves minced
3 tablespoons Butter
10 3/4 oz Chicken Broth
16 oz Water
1/2 cup Champagne Extra
4 French Bread Slices
4 Gruyere Cheese
Cayenne Pepper
Chive Minced

Directions:

1. Saute garlic in butter for 10 minutes, stirring often.

2. Do not brown. Add broth, water, champagne and simmer 5 minutes.

3. Toast bread. Ladle soup into bowls. Float bread on top of soup, sprinkle with cheese and bake at 475 degrees, uncovered, for 15 minutes.
