Here is a very simple and delicious kind of way to eat toast. It uses only the basic of ingredients and some wine. The taste will knock your socks off.

Ingredients:

3 tablespoons Butter
4 Sourdough Bread Toasted Thick slices
3 tablespoons Flour
1 1/3 cups Dry White Wine
1/2 teaspoon Tarragon Crushed
Nutmeg
8 Green Onions with tops Minced
1 cup Monterey Jack Cheese
4 Green Onions with tops Trimmed (opt. garnish)

Directions:

1. Melt butter in medium saucepan over low heat.

2. Stir in flour and cook for 2 minutes. Gradually,pour in the wine, whisking constantly.

3. Cook over medium heat until thickened,about 5 minutes.

4. Stir in tarragon, 8 chopped green onions and the cheese.

5. Cook over low heat, stirring constantly until cheese is melted.

6. To serve,arrange toast on plates, spoon sauce over toast.

7. Sprinkle with nutmeg and garnish with additional green onions, if desired.
