This refreshing bar dessert combines sweetness and fresh lemon flavor balanced with a tasty crust. The crust is baked first, then the lemon filling is added.
1. Crust: Mix together first three ingredients and press into ungreased 8 inch or 9 inch square pan.
2. Bake at 350 degrees 12-15 minutes until light brown.
3. Cool in pan on rack Topping: Beat eggs well; beat in rest of ingredients.
4. Pour into crust.
5. Bake at 350 degrees for 25 minutes.
(Puffs in baking, falls in cooling)
6. Cool in pan on rack and cut into squares or bars (Sprinkle with confectioners' sugar if you want.
