California Short Grain Rice Breakfast Burritos

An easy and quick recipe that,s simple and delicious. A healthy way to start the day!

Ingredients:

1/4 Cup Celery chopped
1/2 Cup Red Bell Pepper
1/2 Cup Mushroom finely chopped
1/2 Cup Onion med
1/2 Cup Carrot
3 Cups Brown Rice
1 Olives
8 Unit Eggs or egg substitute to equal 8 eggs; (remove yolks if desired) OR 1 lb. tofu drained and mashed
1/4 Cup Skim Milk chilled
1 Cup Cheddar Cheese up to 2
1 Tablespoon Margarine or butter; (softened)
1/4 Teaspoon Salt (to taste)
1/4 Teaspoon Pepper ;
1 Unit Tortillas
1 Unit Salsa

Directions:

1. Heat large skillet over medium-high heat.

2. Add margarine. When margarine bubbles add vegetables and cook for 5 minutes.

3. In a separate bowl whisk together eggs, milk, salt, pepper.

4. Reduce heat to low-medium and pour eggs over vegetables.

5. Continue stirring and add rice. Heat 2 minutes and then serve immediately or spoon into warmed tortillas.
