2 Cups Shrimp
2 Oranges peeled and sectioned
1/2 Cup Grape
1/3 Cup Red Onion
1/3 Cup Lemon Juice depending on the
1/4 Cup Orange Juice chicken stock or low-sodium chicken stock
2 Tablespoons Vegetable Oil as needed
2 Teaspoons Dijon Mustard (I use Grey Poupon)
1 1/2 Teaspoons Sugar
1 Teaspoon Orange
Cup Alfalfa Sprouts
1/4 Cup Almond toasted
2 Unit Croissant cut in half lengthwise

1. In medium bowl, combine all ingredients except sprouts, almonds, and croissants; mix well.

2. Cover; marinate in refrigerator 1 hour. Drain; add sprouts and almonds.

3. Serve on croissant halves. Refrigerate leftovers.
