Camarones Al Ajillo - Garlic Shrimp

This zesty recipe makes a great family-style appetizer plate. Be prepared to make a double batch, because they will go fast!

Ingredients:

1/2 cup Olive Oil Pure Spanish
4 Garlic cloves finely chopped
2 1/2 lbs Shrimp prawns or extra-large shells and heads left on
2 Limes Juice
Salt to taste
pinch Dried Oregano
1/4 cup Fresh Parsley Finely chopped
dash Hot Sauce optional

Directions:

1. In a large frying pan, heat the oil until it is fragrant, then cook the garlic, stirring, 1 to 2 minutes.

2. Raise the heat to medium, add the shrimp, and cook, stirring, until they turn pink, 5 minutes.

3. (If you prefer extra oil, add it along with the shrimp).

4. Add the lime juice, salt, oregano, and parsley, and stir well.

5. Correct seasonings and add Tabasco. Transfer to a heated serving platter and serve immediately, accompanied by crunchy bread to soak up the garlic-flavored oil.
