Camembert & Walnut Pate

Sometimes the simplest recipes are the best. Here we prepare a party pate that is sure to please, and quick to prepare in the food processor. This recipe allows us to enjoy the tang of Camembert without being overwhelmed, while the walnuts add just the right contrast of taste and texture.

Ingredients:

7 oz Camembert Cheese rind removed
4 oz Cream Cheese cut in chunks at room temperature
1 tablespoon Lime Juice fresh
2 tablespoons Walnuts Finely chopped

Directions:

1. Blend Camembert in food processor until smooth.

2. Gradually add cream cheese, processing until smooth after each addition.

3. Add lime juice, process until smooth. Transfer mixture to bowl.

4. Mix in 2 tablespoons nuts. Season with salt and pepper.

5. Spoon pate into 2 cup bowl. Sprinkle with additional chopped walnuts.

6. Serve with toasted baguette slices and crudities like endives and red pepper strips.

7. If Camembert is very strong, increase amount of cream cheese.
