Canadian Bacon Casserole

The preparation is quick and the finished product is delicious. This recipe will be perfect to servefor that special Sunday morning family breakfast or brunch with the ladies.


12 Canadian Bacon Slices
1 tablespoon Sweet Butter
8 Swiss Cheese Sandwich size slices
12 Eggs
3/4 cup Light Cream
Salt to taste
Pepper to taste
2 tablespoons Parmesan Cheese
2 tablespoons Fresh Parsley Chopped

1. Preheat oven to 350 degrees.

2. Saute Canadian bacon in butter, 1 minute each side, drain.

3. Fit bacon slices around rim of 10" pie pan to form a scalloped edge.

4. Place cheese slices in bottom of pan, slightly overlapping bacon.

5. Break each egg into a small dish and carefully slice onto cheese.

6. Cover with cream; season with salt and pepper.

7. Sprinkle grated cheese on top. Bake 20 to 30 minutes, until eggs are set and top is lightly browned.
