Canadian Bacon & Cheddar Puff

This tasty appetizer combines bacon, cheddar and apple slices into individual treats. A great appetizer for a party!

Ingredients:

6 tablespoons Dijon Mustard Each and honey
2 teaspoons Caraway Seeds .
6 English Muffins split and toasted
2 tablespoons Margarine Butter or
12 slices Canadian Bacon (approximately 1 Ib.)
1 Granny Smith Apple peeled, cored and thinly sliced
4 Eggs whites room temperature
1 Cheddar Cheese L/3 cups finely grated
1/2 teaspoon Paprika
Salt to taste
Pepper to taste
Parsley sprigs
Apple slices

Directions:

1. Combine mustard, honey and car-away seeds; spread 1 tablespoonful on each muffin half.

2. In a large skillet, melt butter and saute Canadian bacon slices until thoroughly heated, turning once.

3. Remove with slotted spoon. Saute apple slices lightly in drippings.

4. Arrange Canadian bacon slices and apple slices on muffins; place on baking sheet.

5. In a large bowl beat the egg whites until stiff peaks form.

6. Fold in cheddar cheese, paprika, salt and pepper.

7. Mound on muffins, spreading evenly over topping.

8. Broil in a preheated broiler until puffed and golden, about 1 minute.

9. Garnish with a parsley sprig and additional apple slices.
