Canadian Cottage Cheese Cake

If you have been looking for the perefct cheesecake recipe, well this is not it - but it may come close! This is a solid tradtional cheesecake, and with the fruit added on top it is delightful.

Ingredients:

1 cup Wafer Fine crumbs
3 tablespoons Butter Melted
3 tablespoons Sugar
3/4 teaspoon Cinnamon
2 lb Cottage Cheese
5 Eggs
1/2 cup Flour
1 cup Sugar
2 teaspoons Lemons rind
2 tablespoons Lemon Juice
1/2 teaspoon Vanilla
1 cup Heavy Cream
2 cups Strawberries
1/4 cup Cornstarch
1 cup Sugar
1/4 cup Orange Juice
2 tablespoons Oranges rind
3 cups Strawberries Whole

Directions:

1. Combine crust ingredients and press into a 9 inch springform pan and bake 350 for 10 minutes and cool.

2. For filling: press cheese through sieve into a bowl.

3. Add eggs one at a time. Beat in flour and sugar.

4. Stir in rind and juice and vanilla. Whip cream and fold in.

5. Pour into crust. Bake 350 1 hour and 10 minutes or until set.

6. Cool and chill. For topping: Blend berries to puree.

7. add sugar and cornstarch with juice and rind.

8. Cook thick and clear. Place whole berries over chilled cake.
