If the weather is sizzling, this cantaloup salad will hit the spot. Dressed with an easy poppy seed dressing, and topped with crumbled onion and bacon, you'll feel cooler just looking at it.

Ingredients:

1 Cantaloupe Large or 2 small
Lettuce leaves
1 Onion thinly sliced and separated into rings
1/2 lb Bacon Cooked and crumbled about 12 slices
3/4 cup Vegetable Oil
1/3 cup Honey
1/4 cup Red Wine Vinegar
2 tablespoons Poppy Seeds
1 tablespoon Onion minced
1 tablespoon Dijon Mustard
1 teaspoon Salt

Directions:

1. Peel cantaloupe and cut into bite-size pieces; arrange on lettuce leaves.

2. Top cantaloupe with onion and crumbled bacon.

3. Drizzle dressing over salad. Blender Poppy Seed Dressing: Combine all ingredients in container of electric blender; process on low speed for 30 seconds.
