3. Cover with a brine made by dissolving 4 tablespoons salt in 1 quart water.
4. Let stand 3 hours. Drain. Rinse in cold water.
5. Add rind to syrup made of remaining ingredients.
6. There should be sufficient syrup to cover rind.
7. Boil 10 minutes. Let stand overnight. Boil slowly until rind is clear.
