Ingredients:

1/2 Ripe Cantaloupe 1/2 Ripe cantaloupe
3/4 Cup Red Bell Pepper 3/4 Cup Finely diced red bell pepper
1/4 Cup Cilantro 1/4 Cup Finely chopped cilantro
3 Tablespoons Scallions 3 Tablespoons Finely chopped scallions white and green parts
1 Unit Lime 1 Unit Lime juice of
1 Pinch Hot Pepper Flakes 1 Pinch Salt and hot pepper flakes

Directions:

1. Found this recipe attached to the cilantro that came in with a produce order at work.

2. Not a melon man myself, but I figured there'd be some chileheads who are gaga over such.

3. Anywho... Remove seeds and rind from cantaloupe.

4. Chop cantaloupe into very small dice. Put in bowl.

5. Add diced red pepper, cilantro, scallions, and lime juice.

6. Stir. Add pinch of salt and pepper flakes. Chill.

7. Serve with grilled chicken, fish, or steaks.

8. Makes 4 servings. This is an offical 5 A Day recipe.
