Fresh cantaloupe is the star of this refreshing, cold fruit soup. This recipe would make a nice first course for a summer lunch.

Ingredients:

4 Cantaloupes small
6 oz Orange Juice concentrate
1 cup Honey
1/2 teaspoon Cinnamon (more to taste)
1 cup Heavy Whipping Cream
1/2 cup Calvados
Fresh Mint Leaf (garnish)

Directions:

1. Cantaloupes should be peeled, seeded, and cut into 1-inch chunks.

2. Puree cantaloupe in blender or processor until smooth.

3. Stir in remaining ingredients except mint and mix well.

4. Chill thoroughly. Serve in chilled stemmed glasses or glass bowls and garnish with mint sprigs.
