Canterbury Jumbles

This classic drop-cookie recipe is easy and fun to make; children especially like making drop cookies! The flavors of coconut, nuts, raisins and chocolate chips make this recipe a crowd-pleaser.

Ingredients:

1/2 cup Vegetable Shortening Solid
1/2 cup Unsalted Butter 1 stick
2 cups Dark Brown Sugar Firmly packed
2 Eggs
1/2 cup Buttermilk
2 teaspoons Vanilla
3 1/2 cups Flour
1 teaspoon Baking Soda
1 teaspoon Salt
1 cup Coconut flaked
1 cup Macadamia Nut coarsely Chopped
1 1/2 cups Raisins
3 cups Semisweet Chocolate Chips

Directions:

1. Preheat oven to 400 F In a large mixing bowl, bet the shortening, butter and brown sugar together until smooth.

2. Beat in the eggs, then stir in the buttermilk and vanilla.

3. Blend the flour, baking soda and salt together in a small bowl, stir the flour mixture into the butter mixture until incorporated.

4. Stir in the coconut, nuts, raisins and chocolate chips.

5. Drop by level half-tablespoons onto greased cookie sheets.

6. Bake for 7-10 minutes, until the cookies are puffed and slightly brown.
