East meets west. England's finest canned meat cooked with oriental flavours. Delicious.

Ingredients:

1 tablespoon Vegetable Oil
1 Carrot sliced diagonally
6 Green Onions sliced 1/4 inch
1 Garlic minced
1 Cucumber cut into chunks
2/3 cup Water
1 tablespoon Cornstarch
3 tablespoons Sugar
3 tablespoons Ketchup
1 teaspoon Soy Sauce
3 tablespoons Vinegar
12 oz Spam cubed 1/2 inch
8 oz Bamboo Shoots drained

Directions:

1. In large skillet, cook oil over medium heat.

2. Add carrot, green onion, garlic and cucumber; cook, stirring occasionally until crisp tender (4 to 5 minutes).

3. Add remaining ingredients except Spam and bamboo shoots.

4. Cook, stirring, until sauce is thickened. Add Spam and bamboo shoots.

5. Cook until heated through. If desired, serve over rice.
