Cappelini With Herb Spinach

A collection of Pasta recipes including Pasta Primavera, Avocado Linguine and Cacio e Pepe (Peppery Pasta).

Ingredients:

8 oz Angel Hair Pasta
10 oz Frozen Spinach
1 tablespoon Olive Oil Virgin
1 Onion chopped
2 tablespoons Fresh Parsley chopped
1/2 teaspoon Dried Basil
1/2 teaspoon Dried Oregano
1/2 teaspoon Ground Nutmeg
Salt to taste
Pepper to taste
2 tablespoons Parmesan Cheese Grated

Directions:

1. Bring a large kettle of water to a boil and cook pasta until al dente, 3 minutes.

2. Drain in a colander; set aside. Meanwhile place frozen spinach in a steamer rack over boiling water until slightly wilted.

3. In a non-stick skillet, heat oil and saute onion until softened.

4. Place spinach, onion, parsley, basil, oregano, nutmeg, salt and pepper in a blender of a food processor fitted with metal blade, and process to puree.

5. Place pasta in a serving bowl, toss with sauce and sprinkle with Parmesan cheese.
