Caramel Apple Cheesecake

This is one of my favorite holiday treats or just great for when you are in the mood for something rich.

Ingredients:

21 oz Apple Pie Filling can
1 Graham Cracker Pie Crust 9 inch
16 oz Cream Cheese packages , softened
1/2 cup Sugar granulated
1 teaspoon Extract Of Vanilla
2 Eggs large
1/4 cup Caramel Topping
12 Pecans halves
2 tablespoons Pecans chopped

Directions:

1. Preheat oven to 350 F (175 C).

2. Remove 3/4 cup of apple pie filling and set aside.

3. Spoon remaining filling into pie crust. In a medium bowl, beat together cream cheese, sugar and vanilla until smooth.

4. Add eggs and beat well. Pour over apple filling.

5. Bake for 35 minutes, or until center is set.

6. Cool on a wire rack.
