Caramel Cereal Mix

Ingredients:

3 cups Shredded Wheat Biscuits Bite-size
3 cups Oat Cereal Round toasted
2 cups Pretzel sticks broken
1 1/2 cups Peanuts Salted
1 1/3 cups Sugar
3/4 cup Butter
1/2 cup Light Corn Syrup
1 teaspoon Vanilla

Directions:

1. Combine shredded wheat biscuits, toasted oat cereal, pretzels, and peanuts in a large buttered roasting pan.

2. Butter the sides of 2-quart saucepan. In the pan combine sugar, butter or margarine, and corn syrup.

3. Cook over medium heat to boiling, stirring constantly with a wooden spoon to dissolve sugar.

4. Cook, stirring frequently, till thermometer registers 280 F, soft-crack stage.

5. This should take about 10 minutes. Remove saucepan from heat and stir in vanilla.

6. Immediately pour syrup mixture over cereal mixture.

7. Stir gently to coat cereal. Bake in a 350 F oven about 20 minutes or till golden brown, stirring once.

8. Transfer cereal mixture onto a large piece of foil.

9. Cool. Break up cereal mixture into small clusters.
