1 1/2 Cups All-Purpose Flour 1 1/2 Cups Unsifted all-purpose flour
1 Teaspoon Baking Powder 1 Teaspoon Baking powder plus
1/2 Cup Butter 1/2 Cup Butter or margarine; softened
1 Cup Sugar 1 Cup Sugar (5.5 oz)
2 Unit Eggs 2 Unit Egg yolks (up to 5)
2 Tablespoons Milk 2 Tablespoons Milk (evaporated is best)
1 Teaspoon Extract Of Vanilla 1 Teaspoon Extract Of Vanilla or orange flower water; optional
2 Unit Eggs 2 Unit Egg whites ;
1 Cup Light Brown Sugar 1 Cup Light brown sugar packed
1 Cup Walnut 1 Cup Coarsely chopped walnuts

1. Preheat oven to 350 F Lightly grease 9-by-9-by-2-inch baking pan.

2. Sift flour with baking powder In medium bowl, with electric mixer at medium speed, cream butter with granulated sugar and egg yolks, until light and fluffy.

3. 3, At low speed, beat in flour mixture, along with milk and vanilla, just until combined.

4. Turn into prepared pan, spreading evenly. Bake 20 minutes.

5. In small bowl, heat egg whites, just until stiff.

6. Gradually beat in brown sugar, then stir in nuts.

7. Spread evenly on top of warm crust. Bake 20 minutes longer, until puffed and lightly browned.

8. Cut into 16 bars while still warm. Let cool completely in pan on wire rack.
